Our beef brisket is cooked in natural wood smoke for 10 to 12 hours and rested for another hour before serving. It emerges from the smoker succulent and tender having taken on delicate smoky flavours from the wood smoke. 

We normally serve it in a brioche bun with home made sweet pickles.
